RHINE KOLSCH

Rhine Kölsch is a single strain of Saccharomyces cerevisiae originally hailing from a storied German Kölsch producer along the Rhine River. This strain will be quite clean at the lower fermentation temperatures allowing the malt and hop profile to shine through. At higher fermentation temperatures, this strain will exhibit a subtle yet complex ester profile.

VON DEGENBERG HEFE BLEND

This culture pays homage to the history of wheat beer in Germany, and celebrates an individual who was granted the authority to violate the norms and traditions of brewing at the time, largely set by the German Purity Law.

In the tradition of bucking the norm, Von Degenberg Hefe Blend also goes against what brewers might expect in a hefeweizen culture. Expect a perfect balance of the typical hefeweizen esters and phenols from the two "traditional" brewing strains, augmented with more complex phenols and enhanced aromatics contributed by two characterful and fragrant wild yeast.
