Mash: Single Step Decoction Mash; 35 minutes at 122 ºF; 45 minutes at 150 ºF; 10 minutes at 170 ºF

8.5 lbs belgian pilsner

9 oz kolsch malt

6 oz white wheat

6 oz carapils

3 oz munich

Boil: 60 minutes

1 oz Styrian Golding - 60 Minutes

1 oz Styrian Golding - 20 Minutes

1 oz Styrian Golding - 0 Minutes

Yeast:

The Yeast Bay Wallonian Farmhouse III


 

Fermentation:

Pitched Yeast Bay Wallonian Farmhouse III at 70 ºF and ramp up to 76 ºF; approximately 2 weeks in primary
