7 lb Belgian Pilsner

2 lb American White Wheat

1 lb American Rye

1 lb Unmalted Belgian Wheat

1.8 oz Oats

 

Boil: 90 minutes

2.5 oz Archer leaf - 60 Minutes

½ tsp Wyeast nutrient -15 Minutes

The Yeast Bay Amalgamation

Dregs from Black Raven Pour Les Oiseaux, Boon Geuze

 

Fermentation:

Co-pitched at 80 ºF; 4 day vigorous ferment; 2 months in carboy.
